Here, every bottle is selected for its balance and its ability to harmonize with the Chef’s cuisine. From hidden gems by independent winemakers to essential vintages, the selection prioritizes authenticity and the perfect quality-to-price ratio. For Hervé, wine service is a ritual of precision: many cuvées are decanted at the very last moment to ensure they are presented at their absolute quintessence.
Steeped in history, Le Mail has preserved its traditional brasserie soul while undergoing a complete and ambitious renovation in 2018. Hervé Brandt and Patricia Mazzolini made it a point of honor to protect the authenticity of the venue while adding a contemporary touch.
